Pumpkin Cookies

It is Fall! Time for Everything Pumpkin!

Pumpkin Cookies
4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons Penzey's Cake Spice (or just cinnamon, pumpkin pie spice)
1/2 cup butter
1 1/2 cups shortening
2 cups sugar
1 15 ounce can pumpkin puree (or two cups home made pumpkin puree)
2 teaspoons vanilla
2 large eggs
2 cups craisins (or raisins)
1 cup chopped walnuts

Preheat oven to 350
Line baking sheets with parchment

Combine flour, baking powder, baking soda, salt, and spices in a medium bowl. 
Beat shortening and butter till blended, add sugar and mix for 30 more seconds. 
Add pumpkin, eggs and vanilla.  Beat until well combined
Add craisins and walnuts. 
Drop by medium scoop onto prepared baking sheets

Bake for 12-14 minutes or until browned on the edges
Makes about 6 dozen
