Pride of Iowa

This is a very old recipe and I am not sure why it is called Pride Of Iowa.

Pride of Iowa
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 large eggs
1 teaspoon vanilla
3 cups rolled oats
1 cup coconut
1 cup chopped walnuts


Preheat oven to 350
Line baking sheets with parchment paper
Cream together shortening and sugars (brown and white)
In a separate bowl, combine flour,  salt, baking soda, and baking powder
Add flour mixture to creamed mixture, beat well to combine. 
Add eggs, one at a time, beating well. Add vanilla. 
Add oats, coconut and nuts. Stir to combine. 
Use the medium scoop and drop onto parchment lined sheets

Bake for 15 minutes. Until golden brown. 
Let cool on parchment for a few minutes before removing to wire rack to cool completely. 
Makes 2 1/2 dozen
